Healthy, Two Ingredient Pancakes


These delicious pancakes are easy to make and are totally guilt-free. And all it takes is 2 ingredients- an egg and banana! These are full of possibility, you can add chia seeds like I did, or flaxseed, chocolate chips, and fruit.

Here's how:

-In a bowl, crack one egg and add a ripe banana. (banana doesn't have to be brown).
 
-With a fork mash up the banana and mix the egg and banana together until a batter is formed. It doesn't have to be completely smooth, but try to mash up all large banana chunks!

-Pour on a large greased skillet. The batter will make two large pancakes, or three small ones.
-Cook on medium high for a few minutes until edges begin to golden. Flip the pancakes and repeat. Serve and enjoy!

Some of my favorite things to top my pancakes with are fresh huckleberry jam, almond butter, or classic maple syrup. Again, the possibilities with these pancakes are endless!

Monday Morning Workout


I managed to snap some photos of my workout this morning, but it wasn't until after I got home that I realized they weren't very good photos! Regardless, my workout was pretty killer! I began Kayla's BBG week 5 today, and I am excited about it! The guide has stepped up its game this week and I am looking forward to proving to myself that I can do it. Today called for legs and cardio. After all the lunges, burpees, and sumo squats, I did a few sets of (heavy) squats on the rack. Needless to say, my legs and booty got a damn good workout this morning. After this 45 minute workout I did a 30 minute LISS session on the treadmill. While doing LISS, I listen to an interesting podcast, that keeps my attention and makes my mind forget what I am making my body do! ;) While Mondays are typically one of the worst days of the week because we are all missing the weekend, I tend to like them because it is a new week and a new chance to become your best self! Sunday Fun Day

Today was a little cold (didn't get above 40) but it was very sunny and nice outside so my roommate and our good friend went on a hike up Tablerock. Before we left, I made some pancakes for breakfast and had some coffee :)
 The picture doesn't do the pancakes justice, but they are so yummy, and healthy too! I made the batter out of a banana and an egg. So simple, easy, and quick!


Here I am pre-hike showing off my hydration pack. My lovely mom got this for me for Christmas and this was my first time using it, so naturally this picture had to be taken. It actually came in handy, I love it!

Here is the view from the top of the trail! Note the snow in the corner... haha! Like I said, it was quite chilly but the sun sure was definitely shining! I love getting to the top of any hike. It is so satisfying!


Hiking worked up quite the appetite, and I was craving some fruit! Smoothies are my favorite because the blend of fruit is delicious and they are easy to whip up real quick! This one contains:

- 1 apple
- 1 banana
- 5 oz. plain greek yogurt
- 1/2 cup of frozen blueberries
- A handful of grapes
- Chia seeds & flaxseed meal
- 1/2 cup of unsweetened vanilla almond milk

It was a perfect post hike snack! I hope everyone else enjoyed their Sunday!


Iced Tea, Sunshine, and LISS

Last Tuesday was a beautiful February day in Boise! It got up to a whopping 61 degrees. The inner Southern California girl in me cries thinking about how this is considered super warm. But hey, Boise will do that to you! This sunny weather called for some iced tea from Starbucks before class. After class, I hit the gym for a LISS (Low Intensity Steady State) session on the treadmill. I began LISS training four weeks ago after starting Kayla Itsine's 12 week Bikini Body Guide. I definitely underestimated how hard quickly walking for 45 minutes straight would be! I have learned to enjoy it though, as I feel really great afterward! Speaking of Kayla's guides, I start week 5 tomorrow. Which changes up the resistance workouts a little bit and increases my LISS sessions! I am both excited and nervous for this change- we'll see how it goes! For anyone interested in Kayla's guides, check her out on Instagram, @kayla_itsines.
